Simple Sausage & Potato Casserole
This is great if you have a slow cooker!
8 sausages,_I would use October special, caramelised onion & red pepper or Cumberland_
1 tin of tomatoes or passata
3 small onions - chopped
3 cloves garlic - crushed
1 red pepper - chopped
200g small potatoes - halved or quartered
salt /Pepper/ olive oil
2 teaspoons smoked paprika
2 good handfuls fresh spinach
Start by browning the sausages and set aside. Saute the onions until golden for a rich flavour. Add garlic, red pepper, potatoes and paprika. Return sausages to pan. Pour in the tomatoes / passata, season, lid on and simmer for 1.5hrs on a low heat. ( or oven 180c)
When ready to serve stir in the spinach, the residual heat will be enough to wilt.
